Dessert Carnival

How great of Cielo to host this for us...thanks Cielo!

My favorite desserts are creme brulees, custards, panna cottas etc but I kept the grandbabies yesterday & didn't have time to make anything fancy. So I made my "go-to" recipe for quick, easy, delicious & custardy. A Coconut Impossible Pie. You literally throw it in a blender & then you can gussy it up however you want. I garnished the "pie" (there's no real crust...just a very, very thin, floury layer on the bottom) w/ edible flowers & mint, from my garden. Look how beautiful it looks & I only spent about 5 minutes labor on it!

Liquefied raspbery jam in the microwave for a few seconds & then drizzled it on the plate as a garnish. If you love coconut & love custard...you'll love this dessert!

Impossible Coconut Pie

INGREDIENTS

2 cups milk
1/2 cup baking mix
1/4 cup butter
3/4 cup white sugar
4 eggs
1 1/2 teaspoons vanilla extract (I sometimes use rum extract, real rum or other extract flavors)
1 cup flaked coconut

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch pie plate.
Combine milk, sugar, biscuit mix, eggs, butter or margarine, and vanilla in blender container. Cover, and blend on low speed for 3 minutes. Pour into prepared pie plate. Let stand about 5 minutes. Sprinkle with coconut.
Bake for 40 minutes. Serve warm.

I usually but not always bake it in a water bath & don't forget to decrease the temp 25 degrees if you bake it in a glass pan. I've made another version of this using pumpkin & it's just as good & just as easy.

Now I'm off to see all of your desserts! http://houseinroses.blogspot.com/

Smiling Hello from Istanbul:)
Very kind of you to visit me and leaving nice comment.
I see that you love using rosewater, me too, Cheers:)

Well, maybe you know, Turkey's Mediterranean city Isparta is "City of Roses", being the most famous for its rose culture and it is one of the world's leading producer of attar of roses, a valuable oil extracted by steam distillation from rose petals and used in perfumes and cosmetics by the product is aromatic rosewater. So main economic activities of Isparta are rosewater production and handmade carpet making. At our house, there are precious Isparta handmade carpets by the way.

The area is full of magic with amazing rose fields. The stunning scenery with roses is an
experience you would treasure forever! There are also rose perfume factories nearby the rose fields, where daily tours to be organized.

Why not coming to Isparta, as early JUNE to coincide with the annual Rose Harvest?

Have a rosylike lovely day:)

It's such a small world... Thank you for stopping by.

I was named after someone my mother went to High School with in Haltom City.

I'm local to you. The whole family is from cowtown.

So glad your family carried on the name. I've always like it. I even met a dog named Cami via my blogging jaunts!

And your dessert looks wonderful---my mother's favorite.

I couldn't wait until the Dessert Carnival! I copied your Coconut Pie recipe and I can hardly wait to make it! My mother in law LOVES coconut ice cream, so I am certain your pie will make her very happy! I'll let you know how it goes! One question: Can I just use a hand beater to mix the ingredients, or must I use a blender?

Oh, all things I have in my pantry! It looks delicious. I really should have stayed away from this whole dessert carnival thing - being pregnant I do not need any more excuses to eat sweets...

Hi,
I do love your dessert too!! Mine are a lot of work and thats good for a special occasion but yours is a truly good dessert for a last minute.Shame that Chiele gave my recepie the wrong title. Peperkoek is just 1 ingredient in the whole of the recepies.I will sure print your recepie out and try it one day.We sure see the show Top Chef her.It is running a a smaller channel and we are almost at the final. So I take your comments sure as a compliment.
Best regards from Belgium and thanks for your visit.
